Breakfast Muffin air fryer recipe
Filling breakfast muffin sandwich made with regular sausage links which are formed into flat patties, along with actual air fried eggs and cheese slices to melt.
Air fried Breakfast Muffin for two by cutting the casing off three sausages, and rolling them into two pork balls, flattened into two patties to fit in a muffin. Air fry sausage patties for a full 8 minutes, whilst introducing a ramekins to air fry eggs in - along with lightly toasted muffin halves, all done under 8 Minutes.

It couldn't be easier to make a quick breakfast muffin, which consists of a few sausages formed into pork balls, along with English muffins and cheese to melt.
Eggs can be bothersome when attempting to fry in ramekins, which should be achieved under 4 minutes, with an additional 1-2 minutes expected. Egg whites need to set fully, thus its vitally important to air fry until no translucent eggs are visible.
Begin by taking three regular sausage links and cut off the casing to each sausage. You will need to half one sausage whilst combing one and a half sausage into balls.
Balls need to be flattened so they can be made into pork sausage patties, which look a bit like beef burger patties.
Pork balls are sticky to handle thus you will need to flatten them directly on parchment paper, and must remain in place for the completion of this recipe. Fold and crease the sides of the paper lining - which is done so in an effort to retain fat and grease.
Air fry sausage patties, about 5mm thick - for 8 full minutes, whilst at the same time you will cook two eggs for 4 minutes. In addition, English muffin halves will be lightly toasted for a minute - whilst the two cheese slices can melt by themselves on top of the patties.
Round sausage patties can't be too wide because they will air fry on one side of the air fryer basket, next to two ramekins of which will be used to air fry eggs. Ramekins will form eggs into rounded eggs - which will either by partially set yolks or a little runny.
Make a quick and easy breakfast in your air fryer which does have its issues, but shouldn't be too difficult if you don't overdo it. For example, air frying sausage with bacon will only lead to overcrowding your air frying basket.

Soft English breakfast muffins used for this recipe for two, consists of a pack of four soft muffins, cut across to make a breakfast sandwich. Muffins are about 10cm wide, with a lot of crumbs that need to be dusted off into the bin.

Basic breakfast/catering-like sausages were used which are freshly prepared, yet frozen sausage can be used if allowed to defrost in the fridge from the night before. Casing will be easily cut off to produce cheap Sausage Meat to make your pork balls.
Medium Eggs
Standard eggs will be needed to make this recipe which must be cracked into individual drinking glasses, so any broken shell can be discarded prior to pouring the eggs into the ramekins preheated in the air fryer.
Cheese Slices
Whether you call them burger cheese, American cheese, cheese slices or cheese singles; these are the orange-like cheese slices wrapped in individual packs. No need to melt this type of cheese over the sausage patties - they will soften by themselves.
Serving Suggestions
We're talking about a quick and easy breakfast here which doesn't require too much extra, other than a sauce of your choice that is.
I recommend you add tomato ketchup or brown sauce on top of the eggs prior to closing the muffin sandwich, because you may need sauce to makeup for eggs which don't have runny yolks - where sauces will help get it down your gullet a lot easier.
Of course, the breakfast muffin can be dipped in sauces but that isn't helpful when you're on the go.
In addition, your air fried breakfast English muffins can be buttered prior to assembly, whilst a little lettuce and tomato can make it a little more healthy.

Making a full English breakfast muffin sandwich in an air fryer has its issues, but when it comes to health, there's no additional calories and fat content added when air fried.
Air fried sausage patties aren't pretty but will air fry to a firm but soft texture. Eggs can vary in doneness, whilst the soft English muffins take just one minute to warm up.
CONS:
Certainly you will be cooking multiple food items together in the air fryer which can cause a lot of restrictions, and thus this recipe won't be possible for all, if you air fryer has a small capacity - with no chance of positioning both sausage patties and ramekins together.
In which case, you can make a English Breakfast Muffin for one person. Ramekins are needed for this recipe, so you will need at least one to air fry eggs in.

STEP 1: Remove Sausage Casing; combine into 2 Pork Balls
Take three regular size sausage links, cut the casing off all of them with use of scissors, where one sausage is cut in half. Combine one and a half sausage together, mashing the sausage well - before rolling into two medium size pork balls.
STEP 2: Flatten balls into 5mm thick sausage patties on Baking Paper
Ensure the two sausage balls are positioned on parchment paper, before proceeding to flatten each ball - with each ball evenly spaced so they don't have to be re-positioned - as its very difficult to play with these patties as they're quite sticky at this point.
STEP 3: Crack 2 eggs into individual glasses
Crack two eggs into individual small but hopefully wide drinking glasses, which is a vital step as it provides you the opportunity to pick out any shell in the raw eggs, whilst at the same time... give you the chance to crack a third egg if the yolk breaks.
STEP 4: Preheat air fryer: 5 Minutes
Breakfast English muffin recipe begins with a 5 minute preheat, of which you must set the function or manually dial in the air fryer, so your cooking time isn't effected.
STEP 5: Spray Ramekins with Spray Oil
Spray two ramekins out of the air fryer with spray cooking oil - I used sunflower spray oil - on the bottom and the sides, to prevent the air fried eggs adhering to the ceramic.
STEP 6: Cut Breakfast Muffins in half
Cut two soft English muffins much like you would when making a sandwich, whilst shaking access breadcrumbs into a bin - to save dusting your air fryer in breadcrumbs.
STEP 7: Position 2 Sausage Patties in air fryer
With the flattened patties remaining on the baking paper; fold all 4 sides over 2-3 times whilst creasing down the fold hard - so the fold doesn't unravel as it air fries. Position sausage patties on baking paper to one side of the basket - making space for the ramekins on the opposite side a bit later.
STEP 8: Set Temp to 355°F / 180°C; time to 8 Minutes
Set temperature to that stated immediately after the preheat is done, so there's no time for the temp to lower. You want to begin air frying with a very hot air fryer so things will begin to air fry quickly.
STEP 9: PREHEAT ramekins in air fryer on 6th Minute
With 6 minutes remaining on your air fryer - where the time counts down - carefully position ramekins inside basket, beside partially cooked patties. Ensure ramekins don't overlap baking paper, as it will only cause grease/fat to run into the basket.
STEP 10: Pour eggs into ramekins on 4th Minute
Ramekins lined with spray oil will preheat for 2 minutes so on the fourth minute, you can pour eggs into individual ramekins. Of which, the pre-cracked eggs can be conveniently added to the ramekins directly out of the drinking glasses.
IMPORTANT: On the fourth minute - so at the same time as pouring in the eggs - you will need to turn over each sausage patty to ensure they're evenly cooked by air frying for 4 minutes on each side.
STEP 11: Cook until 2nd Minute; Spray eggs with oil for second time
Cook eggs for two minutes before opening air fryer with two minutes remaining on the clock - to specifically spray the tops of the eggs with extra oil - of which, will help to speed up the process of cooking the 'slow to air fry' egg whites.
STEP 12: Warm up four Breakfast Muffins halves
English Breakfast muffins will be added to any available space inside an already cramped air fryer, where positioning four English muffin slices on top of almost fully cooked sausage patties should be fine.
STEP 13: Decanter Sausage Patties & Eggs
Remove all warmed up English muffins and position on plate to serve. Lift both sausage patties out of the air fryer carefully with your hands, whilst remaining on parchment paper. Eggs in ramekins must be lifted with tea towel to prevent burning.
IMPORTANT: You may have too continue to air fry the eggs for an additional 1-2 minutes if eggs white aren't set, where raising the temperature to its highest setting is a must - whilst you'll need to slow down when assembling the Breakfast muffin.
STEP 14: Assemble 2 Breakfast Muffins
With the two bottom halves of the English muffins positioned on a warm plate, add a sausage patty to both. On top of the patties, sit a slice of cheese so it will melt over the hot sausage. Now all that's needed, is to scoop the set eggs out of the ramekins, using a spoon to scrape off around the eggs - where you'll sit the eggs directly on the cheese.
